I want to share this delicious recipe with you’s today, it’s a coconut lover’s dream and it’s for all of you’s that’s don’t mind getting in the kitchen and doing a little baking, It’s super-easy as pie! So let’s get into it! One spoon of this creamy homemade coconut custard pie and you just might hear the crash of the ocean and feel warm sand under your toes!
PREP TIME: 10 mins
COOK TIME: 40 mins
TOTAL TIME: 50 mins
1 ¼ cups shredded sweetened coconut
2 cups whole milk
3 large eggs
3 large egg yolks
½ cup sugar
1 teaspoon vanilla extract
1/8 teaspoon fine grain salt
1 homemade using pastry or store-bought pie crust
1. Preheat oven to 160° C
2. Sprinkle the coconut into the crust or pie dish lined with pastry, and set aside.
3. Pour the milk in a small saucepan, and over a medium heat, bring to a simmer.
4. While the milk is heating, whisk the eggs, egg yolks, sugar, vanilla, and salt together in a large bowl, and gradually add the hot milk to the egg mixture, stirring constantly. Pour the custard into the prepared pie crust.
5. Bake, about 25-35 minutes, or until the center of the custard is set, but still jiggles a bit, like gelatin. Remove from oven and let cool completely on a cooling rack, then refrigerate.
Toppings- Add a thick layer of whipped cream & sprinkle with shredded coconut with a side of your favourite ice cream for the ultimate Coconut Custard Pie experience!
Tip- Use a pie shield or strips of aluminum foil to protect the edges of the crust while cooking the pie.
