If you’re searching for a delicious, new ice cream recipe to try out than this is one is especially for you! This creamy dreamy coconut avocado & lime ice cream is what dreams are truly made of! It’s a great summer treat and it’s a healthy homemade ice cream option that’s vegan, paleo-friendly and absolutely tasty. It’s smooth and ultra rich and the best part is you don’t need an ice cream maker to whip up this vegan dessert! It has a perfect melt-in-the-mouth consistency and the color is totally gorgeous.

You’ll be extremely surprised by how easy this ice cream is to make and how refreshing it tastes!

Okay… so let’s jump straight into it and talk about how to make this easy coconut avocado & lime ice cream!

Prep Time: 5 minutes
Freezing Time: 4 hours or overnight


1 can full-fat coconut milk refrigerated overnight

2 ripe avocados halved, pitted and peeled

1 ripe banana cut, and frozen

3 tablespoon honey

2 tablespoon lemon juice

4-5 large mint leaves


Chill a loaf pan in the refrigerator for at least 30 minutes or up to 24 hours.

In a high-speed blender, add the peeled and pitted avocados. Scoop out the solid part of the coconut milk into a blender and save the liquid part to use in another recipe (like a smoothie). Add the banana, honey, lemon juice and mint leaves. Blend until smooth and creamy.

Pour the mixture into the chilled loaf pan and use the back of a spoon to distribute evenly. Use tight wrapped plastic to cover. Place in the freezer for at least 4 hours or overnight.

For best results, let soften for 10-15 minutes at room temperature before serving. Eat within 48 hours.

How to get the perfect colour? The lemon juice helps it from oxidising but make sure that you freeze the mixture right away once you blend it up to avoid the avocado from turning brown. It won’t taste much different but it will absolutely look better if you work quickly!

How do you tell if the ice cream is done? Scoop some ice cream out with a spoon. When it’s ready it will stay on the spoon. If it’s still too soft, it will slide right off.
